Day 80 Popped Amaranth Peanut Butter Cups (you’ll want to open this)..

Posting this recipe I found on a website for this grain that you can pop. Before I get into the background of this “seed” (which you guys are going to thank me for.. okay well thank whoever posted it.. but still).. I am going to say that I will recap today at a later day.. I usually rush posts when it comes to feelings (because who wants to admit we have those…….. lol).. but this time set me back a little bit (mentally, so ultimately physically).. but I did want to get this recipe out there because this is AWESOME.

Amaranth Seed-

Several species are raised for amaranth “grain” in Asia and the Americas. This should more correctly be termed “pseudograin” (see below). Amaranth grain contains no gluten and is safe to consume for individuals with coeliac disease.

  • Its seeds are a good source of protein. Compared to other grains, amaranth is unusually rich in the essential amino acid lysine.  Common grains such as wheat and corn are comparatively rich in amino acids that amaranth lacks; thus, amaranth and other grains can complement each other.
  • The seeds of Amaranthus species contain about thirty percent more protein than cereals like rice, sorghum and rye. In cooked and edible forms, amaranth is competitive with wheat germ and oats – higher in some nutrients, lower in others.
  • To this day, amaranth grains are toasted much like popcorn and mixed with honey, molasses or chocolate to make a treat called alegría, meaning “joy” in Spanish

Amaranth seed, when properly prepared, may supplement human food. Scientific studies suggest Amaranth grain is a good source of essential amino acid lysine, something other grains are low in. Amaranth is not a complete source of essential amino acids. For example, amaranth is limiting in leucine and threonine – essential amino acids that are abundant in other grains. Amaranth may therefore be a promising supplement to other grains.[15][16] The assimiability of protein in Amaranth is affected by the anti-nutritional factors present in Amaranth, and how it is processed and cooked prior to human consumption. Wet heat processing reduces toxic factors and improves protein availability from Amaranth, while popping and toasting reduces nutritional value of Amaranth.[16] Besides protein, amaranth grain provides a good complimentary source of dietary fiber and dietary minerals such as iron, magnesium, phosphorus, copper, and manganese.

Amaranth seed flour has been evaluated as an additive to wheat flour by food specialists. To determine palatability, different levels of amaranth grain flour were mixed with the wheat flour and baking ingredients (1% salt, 2.5% fat, 1.5% yeast, 10% sugar and 52–74% water), fermented, molded, pan-proved and baked. The baked products were evaluated for loaf volume, moisture content, color, odor, taste and texture. The amaranth containing products were then compared with bread made from 100% wheat flour. The loaf volume decreased by 40% and the moisture content increased from 22 to 42% with increase in amaranth grain flour. The study found that the sensory scores of the taste, odor color and texture decreased with increasing amounts of amaranth. Generally, above 15% amaranth grain flour, there were significant differences in the evaluated sensory qualities and the high amaranth-containing product was found to be of unacceptable palatability to the population sample that evaluated the baked products.

So.. I am SUPER excited to mess around with this grain. Check out this recipe for Peanut Butter Cups:

Popped Amaranth Peanut Butter Cups
adapted from Iowa Girl Eats
yields 12 large cups

Ingredients
1 cup all natural peanut butter {I used crunchy}
2 T butter, melted*
1/2 c powdered sugar*
1/2 c crushed salted roasted peanuts
heaping 1/2 c popped amaranth*
3/4 bag semi-sweet chocolate chips

Method |  Heat oven to 350 degrees. In a large bowl, combine peanut butter and butter until smooth. Add in powdered sugar and peanuts, then mix until combined. Pour in popped amaranth and mix again until combined. Next, grease muffin cups with non-stick spray and fill bottom of cups with chocolate chips – it doesn’t have to be exact. Melt in the oven for 5 minutes. Then, with the back of a metal spoon carefully smooth out the top of the chips while they’re still warm. Next, drop generous spoonfuls of the peanut butter mixture into each muffin cup. Smooth tops with the back of a spoon or your fingers and refrigerate for at least 15 minutes before eating. I froze mine so they’d pop out easier with a knife. Store in an airtight container in the fridge to keep fresh.

*Notes:

  • To pop amaranth, place a medium-to-large pot over medium-high heat and let it get fully hot. Then, add small batches {scant 1/4 c} of amaranth, cover the pot, and quickly shimmy the pot back and forth. They’ll start popping almost immediately and as soon as you don’t see anymore popping {about 10-15 seconds total} quickly transfer them to a bowl. These can burn quick so be sure to work fast. Your first batch may not turn out but use it as a practice run to gage how you can pop most efficiently.
  • Melted butter is probably optional if you want to lighten these up. Or you could likely sub melted coconut oil.
  • Powdered sugar could be lessened or even omitted entirely if you want a less sweet cup. Just compensate with extra amaranth.
  • Use non-dairy chocolate chips and Earth Balance to make these vegan.

When done properly it comes out looking like puffed rice cereal, which can then be doused in milk, eaten by the handfuls or added to rich, decadent peanut butter cups. Pretty sweet, right?

I thought so.

The flavor is astonishingly similar to Reese’s PB Cups. If you wanted you could even add another layer of chocolate on top to get them closer to the real thing. But I preferred the peanut butter tops exposed. It gave them a more rustic look and I could taste the saltiness from the peanuts as soon as they hit my mouth.

Day 74 Finally I found the Black Bean Brownie Recipe :)

Cravings have gone down. Cept I want cheese fries so bad. Cheese ingeneral now.. Isn’t that weird? I use to HATE cheese… and as long as its melted.. I can pretty  much eat it all 🙂 So weird… But anyways cheese fries are a whole nother story. They are awesome. Even better? Hooters Tatertots.. They are the potatoes that you use to get at lunch with that nasty excuse for a hamburger (I’ll show you my kind of hamburger lol), but these tots are loaded with nacho cheese, that green onion shit that’s amazing, sour cream and bacon. Holy fuck. Awesome. Everything about it. So. fucking. good.

Sorry.. I am trying to stop.. really.. lol..

On a better note I COME WITH A BROWNIE RECIPEEEE!!! And I am posting it because its healthy, they are made out of beans, and I need to cut these nasty cravings for this evil thing we call sugar. I still have a little less then 3 weeks so no I won’t be making these any time soon but I lost it and NOW I FOUND IT AGAIN!!!! So here it is.. super stoked.

Vegan Black Bean Brownie Recipe

For the Mix:

1 1/2 cups whole wheat flour
1 tsp salt
1 tsp baking powder
2 1/4 cups raw sugar
1 1/4 cup cocoa
4 tsp instant coffee powder
1 1/2 cups chopped hazelnutsYou also need:
1 15 oz can black beans, rinsed and filled with new water
1 tsp vanilla
1 cup of water (eyeball it by filling up half the empty can)

Preheat the oven to 350 degrees.

Mix together the flour with the salt and baking powder.  For a nice layered presentation in a jar start with half the sugar,  then add half the flour mixture, all the cocoa, the coffee powder, the remaining flour, the remaining sugar, and the nuts on top.  When ready to bake, dump out the jar into a mixing bowl and stir to combine all the dry ingredients.

Drain a can of black beans and rinse thoroughly until the water runs clear.  Return the black beans back to the can and fill with water.  Puree the beans and water.  Add the puree to the dry mix along with the vanilla and extra cup of water.  Stir to combine.

Pour the batter into a greased 9×13 pan.  Bake for 25-30 minutes, rotating the pan around halfway through.  When the brownies are finished they should be firm in the center and the edges will be slightly puffy and starting to pull away from the sides.  My batch was finished at 28 minutes.  It’s important not to over bake in the oven because they will keep baking once you take them out.

Let brownies cool completely then use a 2×2 in cookie cutter to cut into 24 squares.

  3. Found the new love of my life. Sugar Free Rice cake w/ cinnamon and Walden Farms no calorie Caramel spread. HOLY HELL. It tastes like a pancake, to cinnamon toast crunch cereal, to french toast, back to apple I don’t know, but its awesome.
  4. Post workout- 3 eggs 1 egg white w/ Garlic and another amazingness in my mouth.

Today has been good except all the cravings (no I will NOT binge, or eat any of this. If I did it would be after my show lol).. but I did morning cardio, and did a semi decent back work out, but killed late night cardio. I need to start adding more time and taking away certain things.. I am almost 2 weeks out and at that point I will need to cut most fat ALL sugar and majority carbs. I wont be able to have artificial sweetener either lol. Ugh. SO not happy. lolol My suit should be here within the next week. I also ordered tattoo make up (really just for a large birthmark) and figured out my tan and my makeup. I randomly got a message and she wanted to trade (personal training for hair/ tans) HOW FUCKING AWESOME!!! My tanning last year cost $100!!!!!!!!!!!!!!!!!!!!!!!!!!!!! and I did my make up and trust me you could tell. haha anyways.. hopefully now all I need to focus is losing fat but keeping my ass.. ahhhhhh YEAH!!! :):) Gotta keep this mentality going!

Day 65 disappointing ..

Update: Just posting pictures. No work out today. I have missed a total of 4 workouts and I am a solid month out tomorrow. I haven’t been feeling well and if I can’t get my workouts in because of the pain I am going to the doctor. Ate a little extra carbs last night, feel SEMI guilty, but def didn’t eat enough all day. Please don’t let tomorrow be day #3

I think all I had was my protein shake in the morning. Some chicken and veggies. And protein pancakes. I missed about 2 meals feeling like shit.

Day 64 in Pictures

  1. How I measured myself for my bikini. lol. this and a rope. then when I got in the bathroom I had no pen, but mascara in my pocket. You can’t really see the numbers but their there lol.
  2. Finalizing and paying. Done and done.
  3. Told you I wasn’t feeling good.
  4. Able trying to feed me (the BEST) cookies ever.
  5. Drinking tea and pep to. 😦 a cidddddddd sucks.
  6. Lunch. Eat your colors.
  7. Propel. I was locked out of my house and had to do something. So I got drinks because I have to give up carbonation soon.
  8. I made protein pancakes and went to bed. Can you believe theres only like 10g of carbs (I ate a lot of them. I think I have a picture lol but they didn’t look pretty like this one). Ingredients: 1/3c Muscle egg, 1/3c oatmeal and 1/3c cottage cheese.

 

So far tuesday has been alright. The morning wasn’t so good, but it seemed to be fine through out the day. My stomach has been acting up pretty bad lately (I have severe acid reflux) and had to get pepto earlier today. I missed 3 workouts so far. THREE. Not 1. Not 2, but 3. I dont feel that bad (bc I could be missing workouts AND eating like shit) but I just LITERALLY feel like shit lol. No big deal, I am sure it wont last forever.

Triple Chocolate Chunk Muffin Knock-Offs of Whole Food’s 6 Dollar per 4 Chocolate Chunk VitaTop Muffins

Ingredients:

1 3/4 c oats

  •  3 egg whites
  •  3/4 cup unsweetened cocoa
  • 1/2 cup unsweetened applesauce
  • 1 tsp. vanilla extract
  • 1/2 cup plain Greek yogurt (or regular plain low fat yogurt)
  • 1/2 tsp cream of tartar (or 1-1/2 Tbsp. vinegar)
  • 1-1/2 tsp. baking powder
  • 1-1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 cup hot water
  • 1 cup sugar substitute (like Splenda granular) OR 1/4 cup + 2 tbs stevia
  • 1/2 cup semi-sweet chocolate chips (or use white chocolate or peanut butter chips!)

Preheat oven to 350 degrees. Line 2 (12-cup) muffin pans with foil cupcake liners, or spray muffin tin with non-stick cooking spray. Set aside.
In a blender, (or food processor), mix all of the ingredients together, except for the chocolate chips. Blend until oats are ground and mixture is smooth.
Place mixture in a bowl and gently stir in 1/2 of the chocolate chips (set the rest aside). Scoop mixture into prepared muffin pans.
Place muffins tins in the oven for 10 minutes.  After 10 minutes, remove muffins from the oven (but don’t shut oven off), and distribute the other half of the chocolate chips on top of each muffin.
Place  the muffins back into the oven and bake for an additional 2-5 minutes, or until a toothpick comes out clean. *Note, you could skip this step by putting all of the chips in the batter, and baking the muffins for 12-15 min straight, but this method gives the muffins the traditional ‘VitaTop Muffin’ look with the chocolate chips on top!
Cool muffins before removing from pan. ENJOY!!!
Servings: 12 Big Muffins or 24 Smaller Muffins
Calories: 116 Calories Per Muffin or 58 Calories Per Muffin

5 weeks out. kinda getting scared shitless because I don’t even have my suit. Yes that means I haven’t even ordered it. So yes that means I will pay an extra $50 to have it shipped and made sooner.

Life of a procrastinator = just paying more $$$ in the end lol. I swear it happens every time.. like when I decide not to pay my speeding tickets on time….. ohhhhhhhh will I ever learn. ALRIGHT well listen up PLEASEEEEEEE to who ever is reading this I BEG OF YOU please comment with your opinion. I am going to measure and put the final touches into making my bikini. I am so up in the air with what color I want that I am stressing out to the max. Not really (because I could always be more stressed lol), but this isn’t a good feeling. The only thing keeping me from breaking down is, as much as I don’t care for my first suit, I still have it. So all else fails, I do have a back up. So tomorrows post will be dedicated to my bikini choices.

So ever since it hit me that my show is around the corner, I have been stepping it up a notch. I am going to start my morning cardio tomorrow.. oh joy, and hopefully just keep leaning out. My legs are still pretty big (still have my ass though, so that is WONDERFUL), just need to stay positive 🙂 Not to mention I have a few tests this week, 2 classes, a 12 page paper due, a 40+ hour job and a thought process that lasts a solid 30 seconds. To think I am still sane. Ha.

This weekend will be a little light on the blogging, again tomorrow will be dedicated to my bikini, and hopefully get to relax a little. Enjoy the holidays and WORK OUT! & EAT CLEAN and here is some motivation and an AWESOME recipe to try.. gosh I am so darn thoughtful…. 😉

Buttery Apple Streusel Oat Squares

Adapted from Ashley’s apple toppingStrawberry Oat Squares, and pumpkin apple streusel muffins.

Ingredients:

For Oat Base:

  • 1.5 cups regular oats
  • 1 cup whole-grain Kamut flour (or whole wheat pastry flour or white/whole wheat)
  • 1/2 tsp baking soda
  • 1/2 tsp sea salt
  • 1/2 cup Sucanat sugar (or brown sugar)
  • 1 chia egg (1 tbsp chia seeds+ 4 tbsp warm water, mixed well and set aside for 5 mins)
  • 1/2 cup + 2 tbsp Earth Balance, melted
  • 1/4 cup pure maple syrup
  • 1 tsp pure vanilla extract
  • 2 tbsp almond milk

For Buttery Apple Mixture:

Ingredients:

  • 3 granny Smith Apples, peeled, thinly sliced, chopped (makes approx 3 cups, chopped)
  • 2 tbsp Earth balance or butter
  • 1 tbsp maple syrup or brown rice syrup
  • 1 tbsp Sucanat (or brown sugar)
  • 3/4 tsp cinnamon
  • 1/2 tsp ginger
  • 1/4 tsp nutmeg
  • Pinch sea salt

Apple Streusel Topping:

Ingredients:

  • 2 tbsp Sucanat (or brown sugar)
  • 1 tbsp Earth Balance or butter
  • 2 tbsp flour
  • 1/2 tsp ground cinnamon

Directions: Preheat oven to 350F. Line a square pan (I used a 9×9) with parchment paper and oil the sides of the pan and base. In a medium sized pot, add the apple mixture ingredients (chopped apples, Earth Balance, brown rice or maple syrup, spices). Heat over low, stirring frequently for about 10 minutes, until the apples soften and mixture thickens up.

In a small bowl, mix the chia or flax egg and set aside. In a large bowl, mix the oat base dry ingredients: oats, flour, Sucanat/brown sugar, baking soda, salt. In a small bowl, mix the melted earth balance, maple syrup, almond milk, vanilla, and chia egg. Stir well.

Add the wet mixture to the dry and mix well, using hands if necessary. Set aside 1/2 cup of the oat base mixture if desired. Pour the oat mixture onto the square pan and press down with fingers. Use a pastry roller to smooth out if desired. Pour on cooked apple mixture and smooth out. Make the apple streusel topping by mixing all ingredients together with a fork or fingers. Now sprinkle on the reserved 1/2 cup oat mixture and apple streusel topping and sprinkle over top.

Bake at 350F for approximately 30 minutes. Allow to fully cool for at least 30-40 minutes before gently removing from pan. You can firm them up in the fridge before slicing into squares or bars. The bars also freeze very well (I place them into a container in the freezer).

HOW GOOD DO THOSE LOOK??????????! and then we have her… who looks very good 😉

Day 35 youngwildfree

so I am continuing last night over here because I didn’t arrive home till 7am….

So after everyone got a couple drinks down everyone started to loosen up a bit.. I don’t think I laughed that hard or that much in such a long time.. I def needed it…

Well everyone is kind of an idiot (mostly co workers here lol) so we just do dumb stuff (like at work, when its your birthday you get tied up in duck tape…. yup!) any who.. there was a 2 person bike and we were told we had a mission to accomplish.. I actually of video of this whole thing and its fucking awesome.. too bad I don;t know how to post video and second I laugh and sound like a retard..

But we were told we had to bike to this bar down the street take a shot (car bomb) and then get one to go..

Anywho that was pretty interesting.. I don’t really remember much of the night.. besides the pictures that I took. Well listen to this..

So we are driving home, the sun is coming up.. I am sprawled out on the passenger seat, fully reclined, backwards.. yes.. My head was where you put your ass.. lol i was so comfortable.. let me tell you. THAT I DO remember lol.. well we were getting closer to my house and I realize my phone wasn’t working, figured it was just dead.. Well I plugged it in before I hopped in bed and just passed out.. Didn’t set an alarm, I figured I had only 2 hours of sleep I didn’t know fi I would make church or not.. ( I woke up at 11am.. which TECHNICALLY was 10am, which is when church starts, but since day lights savings time, I ended up waking up when it was ending :() any who..

11am Lost an hour of sleep.. so technically 10am… Got home at 7am…. 3 hours of SOLID sleep, woke up just fine..
Made a protein shake. Myofusion (probiotic or whatever? tastes like shit), banana and almond butter ice water.

I realized my phone wasn’t working.. nothing I would do to it would start it.. (and I have had my fair share of broken apple products) so I ended up making an apt for the north brook apple store (closet one, and thank god I made an apt)…

So I drive all the way to apple by my work, and as Im turning into the parking lot my phone turns on by my jiggling the button a little bit.. so I was like wtf.. should I even go in the mall (i have a shopping problem) but I said fuck it.. might as well just tell them I won’t be coming, so got out and entered north brook court…
As I am walking, half way to Apple my phone turns off again.. and won’t turn back on.. awesome.
Walk into the store, give my name and instantly is helped. Drew helped me actually.. and he had swagger.. random detail but it was cute.. he brought it into the back and came out maybe 5-8min later and said it was completely fried. fucking fuck….. yeah..
So $250 later.. have a brand new WHITE iPhone S this time.. I knew I was eligible for an upgrade so it wasn’t TOO bad, but def wasn’t looking to spend that much money considering I just spent a little over $100 the day before.. So money is BACK to being tight lmfao….. UGHHHHH

And here the bottom picture is the phone actually picked up a charge.
And now I have 2 iPhones…..

BUTTTT THE CAMERA IS SSSSSIIICK!!!! Seriously IN fucking LOVE. It takes some of the nicest pictures.. I also picked up another iPod.. just a shuffle though.. only $50.. yeah i guess I didn’t NEED it but it was only $50 more lol and instead of using my iPhone for music and getting it all sweaty might as well suck it upp..

Visited a mattress store and the lady was SUPER helpful. Family owned, priced a Queen mattress for $450-
Mom later texted me about someone in my brothers apt selling a mattress for 80$ might go pick it up tomorrow. It is really nice..
Went to Jewel for a few things.. If  I wasn’t broke enough.

Left for the gym I don’t know what time actually, did bi’s and tri’s wasn’t a bad workout actually.. OH Also made a pizookie yesterday made out of chickpeas.. Here is the recipe.. Turned out just fine.. WAYYY better warm though, and if you can make the ice milk I think it would be even better.. My sister didn’t even know they were made out of chickpeas..

Pumpkin Chocolate-Chip Pizookie

(gluten free!)

Obviously inspired by the Deep-Dish Cookie Pie.

  • 2 cans white beans or garbanzos (drained and rinsed) (500g total, once drained)
  • 1 cup quick oats
  • 1/4 cup pureed pumpkin (or butternut squash or sweet potato)
  • 2 tsp pure vanilla extract
  • 1/2 tsp baking soda
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 and 1/2 tsp cinnamon
  • 3 T canola oil (or coconut oil)
  • 1 and 1/2 cups brown sugar (You can try adding less sugar, if you’re used to healthy desserts; I chose to use this much because the people to whom I served it are used to “normal” desserts. Also, white sugar will work if you don’t have brown. Also: I know some readers have successfully made my original pie with agave.)
  • 1 cup chocolate chips

Blend everything (except the chips) very well in a food processor. (Blend until it’s super-smooth.) Mix in chips, and pour into a pan. (I used a 10-inch springform pan, but you can use a smaller pan if you want areally deep-dish pie.) Cook at 350F for 35 minutes. Let stand at least 10 minutes before removing from the pan.

If desired, you can top this pie with Vanilla Ice Milk.

But the pizookie is so soft and so sweet and so gooey that it really doesn’t need any toppings at all.

Day 33 Roasted and Toasted Garbanzos

Here is a recipe I am going to do this weekend. Sorry, everything deleted again and it will not save unless I post it so.. I hope you guys have a good night and I will hopefully be up and running tomorrow..

“ROASTED & Toasted Garbanzos”

INGREDIENTS:
-3 Cups Garbanzo Beans (rinsed)
-2 Tbspns Olive Oil
-1/2 Tspn Garlic Powder
-1/2 Tspn Ground Cumin
-1/3 Tspn Smoked Paprika
-1/3 Tspn Chili Powder
-1/4 Tspn Sugar
-Salt / Cracked Black Pepper to Taste

METHOD to the MADNESS:
-Pre-Heat Oven to 400 Degrees.
-After rinsing Garbanzo Beans, place on Serving Plate covered by Paper Towel.
-Allow to DRY for at least 30 minutes over Paper Towel.
-Place Beans, Olive Oil, & ALL Spices into sealable Plastic Bag… And, SHAKE!!!
-Once Ingredients mixed THOROUGHLY, open Bag & spread Beans across Cookie Baking Sheet.
-Toss in Oven for 50 minutes – 1 hour.
-Pull from Oven, allow to cool for 3-5 minutes.

GET FIST DEEP into that DELICIOUSNESS & Enjoy the CRUNCH of A Bachelor & His Grill’s ORIGINAL, “ROASTED & Toasted Garbanzo”!!!

NOTE: I used ORGANIC Canned Garbanzo Beans. If you live in the Midwest, Meijer Organics or Full Circle Farms Organic Canned Garbanzo Beans BOTH meet the Recipe need & are relatively INEXPENSIVE @ ~$1.25/15oz.  Living outside the Midwest US, I’m sure there are PLENTY of Grocery Alternatives to Meijer or Full Circle Farms. 🙂

Day 12 Have no fear; Leg day is here!

It’s Friday & It’s Leg Day & I Love It.

I got to wake up an hour later, cuddle with Marley. I’m starting to think its the simple things in life that make it so great!

I made my green smoothie (Mango, Strawberry, Banana, Flax,Fiber,Kale,Almond Milk, OJ, Water, Ice). && about my smoothies, I need to go back to GNC to get the L-carnitine in the Ice T flavor. It MADE my smoothies and now I miss it.

Okay so onto my weekend plans. I have no weekend plans. Besides working out, obviously. But I DO have to study. NOT joking. I have a test Wed and I come home too late on the weekdays to study at night.

So onto  my food for today.. As I was driving here I actually looked at my Lara Bar’s and although they DO only have 4-5 ingredients, its still a little sugar and carbs for my liking. So. I’ll either save my Lara Bars for weekends, or need to control them. Because I love them and I can’t get enough. BUT ON A LIGHTER NOTE!!!!! I’m doing GREAT. The no processed foods is actually going pretty well. I’m pretty surprised actually. I have 1 redbull I’ll drink probably 1 or 2 diet sodas, I have an almond butter packet and MAYBE a lara bar for snacks ( I was excited to have the Lara bar because its chocolate coconut mmmmmm), but I have the rest of last nights dinner (ground beef, brown rice, and broccoli) for my 2 meals at work today.

Look what I just found. :(:( I guess technically I’m not “no processed”

😦 FINE STARTING MONDAY NOTHING BUT WATER AND TEA. AWESOME. just AWESOME. 😦

BOOTY WERK

I think since I’m doing legs 2x a week, my focus on Monday will mainly be Quads, and Friday’s leg day will be Hamstrings.. Both will focus on calves. For example:

Monday:

  • Squats
  • Lunges
  • Back Ext (focus on hams)
  • Leg Ext
  • Leg Press

Friday:

  • Deadlifts
  • Squats (light)
  • Lunges
  • Step Ups
  • Leg Ext (end with these, go heavy)

Like my squats on Monday will be HELLA different then my squats on Friday. Understand? lol.

So I just realized that I may not do BBH this year with Nikki…. 😦 (I’ll post a pic of Nikki and I later when I get home), but that’s really disappointing.. More so because no one told us and they posted pics on their FB of another girl.. LOL.. oh okay….  kinda funny though people are posting that they don’t care because its not Nikki or I. 😦 awwwww…. well.. It was a GREAT 2 years BIG BUCK!

2pm AND I’M JUST NOW EATING!!!! WHAT THE FUCK! I should be having my 3rd meal in an hour not my second. AND I couldn’t find the fucking Lara Bar.. obv I wasn’t meant to eat it today. lol.. So eating a portion of the leftovers and will eat again as soon as I get home.

3:17pm Food was awesome. I was still hungry though, so I’m now eating Justin’s Classic Almond Butter (190 cals) for a “snack”. Also comes in chocolate, honey, and classic. All are AWESOME.

&& QUICK UPDATE:

So.. some “drama” occurred regarding Big Buck Hunter…… Nikki has been sending me convo’s back and forth between her and Dave and something fishy is going on. It wasn’t a definite NO.. but it sure as fuck wasn’t a “yes” regarding whether or not Nikki and I are doing BBH this year :/ which isn’t SO bad.. lol I’m staying positive. My thoughts are either they,

  1. Don’t want any drama (Nikki and I are pretty popular with dem boys, LOL!)
  2. We will be used, but not as much (we get flown everywhere, maybe they are cutting costs).
  3. We still have our job.
  4. They don’t know how to tell us?
  5. They really don’t know?

Regardless of the outcome, I had a BLAST. It was a really cool experience and if I don’t continue, I hope to do something similar. Even though we had a pretty good set up going.. (flown to different states to get paid to party with your best friend?.. yeah. amazing).

530pm I finished the leftovers I had for lunch, and then had Justin’s almond butter for a snack on the way home. I took Marley out and waited for my mom to get home.

715pm I headed to the gym. READY TO FUCKING LIFT! My routine looked a little like this:

Started off with Deadlifts

  • Set 1: 50lbs x 12
  • Set 2: 50lbs x 10
  • Set 3: 60lbs x 10
  • Set 4: 7olbs x 8

But in between each set I did Back ext for 8 to 10 reps.

After deadlifting (which I could of gone heavier, but these kids already took the weight off when I returned). I did Step ups.

It’s literally how it sounds. I have 40lbs (20lbs in each hand) and did each leg 2×10 reps each.

Legs were getting a little wobbly at this point, but was excited for lunges.

Lunges were:

  • Set 1: 40lbs x 25
  • Set 2: 30lbs x25
  • Set 3: BW x 25
  • Set 4: 40lbs x 12
  • Set 5: 30lbs x 12
  • Set 6: BW x 12

I did 4 sets of these abductions adduction machines and followed with Leg Extensions:

  • Set 1: 65lbs x 12
  • Set 2: 80lbs x 12
  • Set 3: 95lbs x 9
  • Set 4: 110lbs x 8

I didn’t do lunges or planks. I was litterally shaking.. and now I’m exhausted. I made a protein shake with myofusion and pb2. I was GOING to make cauliflower pizza, but as I was cutting the cauliflower I decided I wasn’t in the mood lol. So tomorrow I will make blueberry muffins for breakfast (maybe with a ALIVE! green pea smoothie) and the cauliflower pizza. I’m really excited, Sunday I’m going to spend all day making cool dishes. Makes your lifestyle easier when you know how to prepare the foods.

Day 5 Cauliflower Pizza Recipe

9:30am– I switched up my shake for ya’ll. Had the chocolate protein with blueberries and blackberries, flax and fiber. I added more ice to make it colder and it was a little thicker then usual but it was great. I drank the entire shake in about 15 minutes (:

Today I didn’t start work till 10am, so I laid in bed with Marley a little later. I got ready, started driving and realized I had no wallet when my gas light came on as I was turning on the highway.. I then got stopped by a train and finally a few lights later I actually made it to work. Regardless of driving a jeep, 80mph on the highway for 20 miles then another 5-6 miles I made it lol.. phew.. but now I don’t know what I’m going to do because I’m bone dry and moneyless haha .. I’ll figure it out later.. :/

12pm-1pm I’m going to eat 2 Jamie Eason’s Turkey Meat”balls” for lunch. I’ve been drinking COFFEE and I DO NOT drink coffee.. I’m drinking it black with 3 equals to keep my hands busy BECAUSE I AM STARVVVVINNNNNG (yes this is obviously BEFORE I ate lunch lol)

4pm I made steak and veggies last night (DON’T BE SCARED OF RED MEAT PLEASE). I use the steamers in the frozen veggie is because it is So fucking convenient. In most cases you actually get more nutrients via frozen (: Not to mention 1 bag is like 2 meals for me and it takes about 7 minutes to steam and 1 or 2 buttons to push haha.

**BTW My workout schedule has been messed up this week, but it will be the same as what I posted on Day 4 (yesterdays post).. I SHOULD be doing legs today (but since I did them yesterday, obv I wont be doing them today), but today I am actually taking off.. I am INCREDIBLY tired for some odd ass reason. I also really wanna finish my laundry and cleaning tonight. BUT I will post a back workout for all you, or what I would of done (if I just flip flopped the two training days).**

Back is another one of my favorite workouts of the week. When I was training 2 years ago for figure (I know do bikini, WHICH IS SO DIFFERENT), I focused A LOT of back. It can really change how your body looks (v taper, lats, smaller waist, broader shoulders). It overall looks awesome when a girl has a defined back =D.. So here is a basic back workout.. again GOOGLE GOOGLE GOOGLE!!!!! It will be your best friend. Google the SHIT out of fitness and programs and mold them to fit you..

Pullup   

For the most part these are the basic back workouts I complete.

(I don’t normally do deadlift because I did it last night for hamstrings).

Pull Up– Standard dead-hang pull up is grasped with an overhand/underhand/alternative-hand grip.

Then the body is pulled up until the chin clears the bar, and finished by lowering the body until arms and shoulders are fully extended.

Back Raise– Hook your feet under the leg anchor of a back-machine station.
With your upper thighs on the pad and your hands behind your head, initiate the move by forcefully squeezing your glutes, and then bend forward at the hips until your upper body is almost perpendicular to the floor.
Without swinging your shoulders, raise your torso until it’s in line with your lower body.

Inverted Row– Lay on back under fixed horizontal bar. Grasp bar with wide overhand grip.Keeping body straight, pull body up to bar. Return until arms are extended and shoulders are stretched forward. Repeat.

Lat Pulldown– Using a wide bar, hold it with a wide comfortable grip, while putting your knees underneath the pad. Pull the bar down smoothly until it touches the top of your chest. Now extend your arms back to the top.

Anyways I decided I wanted to finally make CAULIFLOWER PIZZA, and all I have to say is A M A Z I N G. It could not have been better. It wasn’t that big but my mom and I ate the entire thing.. cauliflower crust pizza

Yield: One 9 to 12-inch pizza (feeds 2 to 3 people)

Prep Time: 25 min

Cook Time: 18 min

Ingredients:

CRUST:
1/2 LARGE head cauliflower (or 2+ cups shredded cauliflower)
1 large egg
1 cup finely shredded mozzarella cheese (or try another kind!)
1 teaspoon dried oregano
1/2 teaspoon dried minced garlic (or fresh garlic)
1/2 teaspoon onion salt

Toppings:

Whatever your little heart desires. I used cheese and tomatoes (and 1/2 of it had tomato paste).

Directions:

1. Shred the cauliflower into small crumbles. You can use the food processor if you’d like, but you just want crumbles, not puree. You’ll need a total of about 2 cups or so of cauliflower crumbles (which is about half a large head of cauliflower. Place the cauliflower crumbles in a large bowl and microwave them (dry) for 8 minutes. Give the cauliflower a chance to cool.

2. Prepare the crust: Preheat the oven to 450 degrees F. Spray a cookie sheet or pizza pan with nonstick spray (or use a nonstick surface). In a medium bowl, mix the cauliflower crumbles (about 1 1/2 cups since they shrink after cooking) with the remaining crust ingredients. Pat the “crust” into a 9 to 12-inch round on the prepared pan. Spray the crust lightly with nonstick spray and bake for 15 minutes (or until golden). Remove the crust from the oven and turn the heat up to broil.

3. Prepare the pizza: Spread the sauce on top of the baked crust, leaving a 1/2-inch border around the edge. Sprinkle 1/4 cup cheese on top. Add the bacon and pineapple, spreading it out around the pizza. Sprinkle the remaining cheese on top. Broil the pizza 3 to 4 minutes, or until the toppings are hot and the cheese is melted and bubbly. Cut into 6 slices and serve immediately.

1030pm I AM SO FULL. So like I said I am pretty excited about the outcome of the pizza. My mom enjoyed it quite a bit and its hard to get her to eat.. She even asked for there recipe and wasn’t kidding either. LOL she’s a really good cook and Im excited she liked it.. The worst part was cutting the cauliflower but other then that it was simple. Any who I snacked a bit when was making this because I was go hungry.. I had 2 turkey meatballs and some peanut butter. Then I had about a 1/2c cranberries …. :(:(:(:(:(:( Extra cardio tomorrow anyone? Lol. My eyelids are getting heavy  so I should hurry up.. Cant wait to sleep in ❤
